Bake pizza on gas grill. Turn on your gas grill to high heat. If working with a charcoal grill close the vents on the cover almost all the way. This time we cook it on a lower heat about 300f so insure the cheese melts without the crusts burnning. Lay the dough round on the grill with the olive oil side down brush the top of the dough with a thin layer of olive oil too.
Using the peel or a large spatula transfer the pizza to a cutting board and let rest for a few minutes. Believe it or not pizza is one of the easiest things to cook on a grill. Cook a thin pizza for 6 to 8 minutes with all burners on. As each pizza is created we bring it back outside and finish cooking the pizza with the uncooked side down on the grill.
Let the dough cook for about 3 minutes with the lid off or 1 to 2 minutes with the lid on. Toss some beads of water on top. Cook a signature or classic pizza on low to medium heat for 12 to15 minutes with the two outside burners on medium to medium high heat and the middle burner set to off or on low. Cook for 5 10 minutes depending on your cooking temperature.
If you are using a gas grill reduce the heat. If the dough is browning but the toppings still need more time lower the heat and let cook for an additional 2 minutes. It will help cook your pizza evenly and remove. Using a basting brush apply olive or vegetable oil to the grill plates.
Brush pizza crust with olive oil and spread on pizza sauce. Close grill and cook for another 2 3 minutes or until the bottom is a crispy brown and cheese melts. Once you achieve your pizza cooking temperature in your gas grill 400º 500ºf you can test your stone to make sure it s hot enough. Having a pizza stone will make a big difference.
Alternately use cooking spray to spray the underside of the pizza itself before placing on the grill. Grill one side of the pizza. Take the lid off the grill. 8 slide the topped pizza back onto the grill.
We ve tried putting toppings on the pizza on the grill but it s just oo darn hot that way. Rotate the pizza then cook for an additional 6 to 8 minutes. Grilling your pizza also gives it a charred flavor that you won t get from the oven. This will help the pizza from sticking to the grill plates as you cook it.
If they roll around then your stone is read to cook. Close the lid and cook for 2 3 minutes more or until the bottom begins to char and the cheese is bubbly.
